Most people who visit Machu Picchu (https://www.youtube.com/watch?v=d09AwPp5nag) go through the beautiful city of Cusco, which is over 11,000 feet above sea level. Altitude sickness can be an issue in either place so I made this video on how to prevent and treat altitude sickness, with the Cusco Cathedral in the background. I had put off my trip to Peru for years due to the fact that I suffered altitude sickness once before in the U.S. and didn't want to go through that again. However, even though it did hit me in Peru, it was not as nearly as bad as I anticipated, due to the precautions I took.

Food items that heavily rely on water's boiling point, such as pasta, potatoes, and braising meat, will simply take longer to cook since the boiling point of water is reduced at altitude. Cakes, breads, and pastries also have a tendency to dry out, crack, and deflate starting at around 3,000 feet (914 meters). To understand why this happens, you must first grasp the science behind water. When you stop to think for a moment, a lot of cooking has to do with controlling water in its various states. Since most items you cook contain water, or will require a water based cooking method, understanding how water acts at altitude is the first step to mastering high altitude cooking. To master cooking and baking at altitude, the first concept you must understand is atmospheric pressure. When you're standing at any given point on the earth, you have air above you. This air has a weight, and the downward force caused by the ever-present weight of air, is known as atmospheric pressure. It makes sense then if you're standing at sea level, which has an elevation of zero, you will have more air above you, thus more atmospheric pressure, than if you were at a higher elevation. The "elevation" of a geographic location is its height above or below a fixed reference point, most commonly a reference geoid, a mathematical model of the Earth's sea level as an equipotential gravitational surface . Elevation, or "geometric height", is mainly used when referring to points on the Earth's surface, while altitude or geopotential height is used for points above the surface, such as an aircraft in flight or a spacecraft in orbit, and depth is used for points below the surface. Less commonly, elevation is measured using the center of the Earth as the reference point. Due to equatorial bulge, there is debate as to which of the summits of Mt. Everest or Chimborazo is at the higher elevation, as the Chimborazo summit is further from the Earth's center, while the Mt. Everest summit is higher above mean sea level. A topographical map is the main type of map used to depict elevation, often through use of contour lines. In a Geographic Information System , digital elevation models are commonly used to represent the surface of a place, through a raster dataset of elevations. Digital terrain models are another way to represent terrain in GIS. The elevation of a mountain usually refers to its summit. The elevation of a hill also refers to the summit. A valley's elevation is "usually" taken from the lowest point, but is often taken all over the valley. This map is derived from GTOPO30 data that describes the elevation of Earth's terrain at intervals of 30 arcseconds . It uses color and shading instead of contour lines to indicate elevation. Atmospheric pressure drops as altitude increases, making airfoils, like wings and propellers, less efficient. However, atmospheric pressure is also affected by high pressure and low pressure weather systems. This is reflected in the local barometric pressure reading, measured in inches of mercury and also referred to as the altimeter setting. By reference the local altimeter setting and the density altitude chart, you can determine your pressure altitude.

The Colle Delle Agnello, the highest point of this year's Giro D'Italia at 2744m, has 25% less oxygen concentration. What does this mean for the riders? They will be breathing harder and producing more lactic acid, and depending on the individual, power outputs can drop markedly. It's become increasingly common for teams to spend time in high altitude areas like Colorado, Andorra and Tenerife to help their bodies acclimatise to riding in thin air. I did the Huayhuash circuit in Peru in 2012. This was the highest altitude I've ever been to in my life (5000m). I live at sea level in Australia, where our highest mountain is only 2228m. This was the first time in my life I've felt the affects of having less oxygen, especially whilst exercising. Basically, I felt pretty crap - most of the time, with one particular day when I really just wanted to stop, sleep, be left behind - recognised by some as the symptom called, 'the *uck it factor'. You just can't be arsed to do anything and want to be left alone in your own personal little world of pain.
