It will lose its taste in just a couple of hours in such a package. - Unwrapped carrots lose their crispness and sweetness if they are kept at room temperature. So packages from refrigerators will contain tastier carrots. Take well-shaped small carrots with no spots or rootlets. - Two or three sections in a bell pepper indicate that it’s a little bitter and has fewer seeds. If there are four sections, it will be sweet with lots of seeds. Also, pay attention to the lower part of the pepper where it bulges. - Look at the border between the white and green parts of the scallion. If it is distinct, the product is good, if it is gradual - pick another one as this one will be too tough. - Are you a lover of gummy bears? Well, we have some bad news for you. Even if you are one of the ones who does pay attention, food companies aren't always transparent when they design their labels.Ingredients are listed according to volume with the one at the top being the most prevalent in the product, and so on. Look out for sugar at the top of the list. The higher up it is, the more sugar there is in the food. Beware the many names for sugar though. High fructose corn syrup and evaporated can juice might not sound like sugar, but that's exactly what they are. By separating up the variations of sugar in a product, it is listed much lower than if they were added together as 'sugar' in itself. It means that the company can make their product seem healthy by manipulating which ingredients are higher up the list. Number Four: Gluten-free is all the rage with people striving for good digestive health. In America, nearly a third of the population avoids gluten in their diet. As well as being allergic to gluten, known as celiac disease, it is quite common to have an intolerance to it. You have to watch out for foods advertised as gluten-free though as they are not always very good for you. Often a bunch of sugar is added, and the gluten is substituted with unhealthy high glycemic starches, such as from corn, tapioca and potato. Number Three: It's become common knowledge that foods which use the whole of the grain are healthier than alternatives.In fact, there is nothing to say that eating food rich is whole grains is any more healthy than not eating the grains. They are healthier than non-whole grain foods however. A lot of cereal is advertised as being a whole grain food. There's a difference between whole grains and mushed up whole grains though. These cereals do have all of the grain in them, but the fact that it's as flour means that any health benefits of eating the whole grain is lost. In fact, they act in the same way as refined grains, raising blood sugar quickly and causing a sugar slump afterwards. Just having whole grains doesn't make something healthy. It's highly likely that there are all sorts of unhealthy additions too, such as sugar. Number Two: Labels are there to give information about what's in the product. It's quite common for companies to advertise that their food is trans fat free, but what this means might not be what you would expect it to. Trans fat free only means that the food has less that half a gram per serving. That's not none, despite what the label says. You can find out if your favourite products have trans fats in them by looking for hydrogenated fat on the ingredients menu. This is another name for trans fat. Just because something has no - or low - trans fat doesn't mean it's healthy. Vegetable oils aren't so good for you either. Number One: When fat became demonised by the healthy eating advocates the result was processed foods with some or all of the fat taken out. The irony is that these manufactured foods are not at all good for you. Often the taste is affected when the fat is removed. To counteract the lack of taste, chemicals and sugar are added. In fact, it's not the fat we should be avoiding but the sugar, making supposedly healthier low-fat foods less healthy than the full-fat versions. Thanks for watching! Local food is a loosely defined term that describes a movement to shift food expenditures by individuals, families, community organizations, schools, restaurants, and other institutions from foods produced and shipped long distances by larger corporate entities to regional farmers and other local producers of food. Small farming interests, relatively heterogeneous products and short supply chains characterize local food markets, though there is no agreed-upon measure of the distances that constitute “local.” Community-supported agriculture is a mechanism for connecting consumers with local farmers.[25] Farm-to-table efforts are also part of the local food movement. Meatless Monday is a public health awareness campaign encouraging individuals and families to eat a meat-free diet at least once each week. Launched in 2003 through the Johns Hopkins Center for a Livable Future, its focus is on preventable diseases associated with excessive meat consumption [26] but the campaign has also been incorporated by many concerned about sustainable agriculture and the environment.[27] Slow Food is an international movement founded in Italy in 1986, with Slow Food USA established in 2000. The organization stands in opposition to “the standardization of taste and culture, and the unrestrained power of food industry multinationals and industrial agriculture.”[28] Among those influential in the food movement in the United States are writers, including Michael Pollan and Marion Nestle, and celebrity chefs such as Alice Waters, Mario Batali and Jamie Oliver. Popular books and movies on contemporary topics in food include Fast Food Nation, The Omnivore's Dilemma and the documentary Food, Inc.. In 2011, the president of the American Farm Bureau Federation referred to this influential group as “self-appointed food elitists” and the Washington Post published an op-ed from Eric Schlosser, author of Fast Food Nation, defending the work he and colleagues have done to improve food systems in the United States. Offering government food assistance to the lowest income Americans dates back to the administration of President Franklin D. Roosevelt and has continued into the 21st century.[34] In FY 2011, the budget for the USDA Food and Nutrition Service, which is responsible for the major feeding programs, was $107 billion. The largest single food assistance program in the country is the Supplemental Nutrition Assistance Program, the provisions for which are contained in a Farm Bill that is re-authorized by Congress and signed by the president every five years. Benefits to SNAP recipients cost approximately $75 billion in 2012. Largely uncontroversial for most of its history, the SNAP program was targeted for major cuts by members of the House of Representatives in the 2012 Farm Bill re-authorization attempt.[35] House leaders also endeavored to separate the SNAP program from the Farm Bill, splitting the long-standing coalition of urban and rural legislators who traditionally backed the renewals of funding for the Farm Bill every five years.[36] Increases in the size of the SNAP caseload during the early 2000s were associated with increases in the unemployment rate and with a number of policy changes made to the program in many states.[37] A series of six measures to better understand employment trends developed by the Bureau of Labor Statistics, three of which are more conservative estimates of unemployment and three of which define it more broadly, all showed correlations with SNAP participation. Despite being Italian, let me admit that I don’t know much about food, but this didn’t turn me down as my work (creativity for business) is about food for thoughts rather than real food. So let me share with you the case I made at the conference. Modena, my hometown, is famous all around the world for its balsamic vinegar. Given the time, the art and the skill required to produce it, balsamic vinegar tends to be a luxury product. Obviously, nowadays, you can find the cheap version of it at your local discount store, but I wouldn’t classify it as balsamic. Incremental innovation: for years Italian producers (mostly families) have refined the processes of production, and improved the quality of the final product. The result was the creation of a line of goods, a classic example of incremental innovation. The problem: the more stars you see on the bottle, the more expensive it is, therefore reducing the overall number of customers interested in purchasing. What if, on the other hand, producers were trying to grow their business by opening up new markets? Incremental innovation won’t work, they needed to embrace disruptive innovation. Disruptive innovation: opening up the U.S. market. Italian families wouldn’t have had a chance to serve the US market unless they stopped to think incrementally. Human centred design is the key here. Rather than spending the time on their premises, someone in the family went over to the US and started to observe the potential customer over there.
