Today we'll cook with Sonia the sea bass in a salt crust, a very simple and quick dish which keeps the flavor and the nutritional values of fish intact. *** Sometimes cooking fish may seem a challenge, but today I'll suggest you a simple recipe with a healthy and fat-free cooking method: the sea bass in a salt crust . Let's see together what ingredients we'll need: • over 6 cups (1 kg) of coarse salt • 3 ½ cups (1 kg) of table salt • 3 egg whites • 1 organic lemon • 1 clove of garlic • aromatic herbs, such as (bay, thyme, sage, rosemary, dill) • 1 sea bass of about 1,8 lbs (800 g) • extra virgin olive oil Let's make the sea bass in a salt crust: This is our sea bass, as you can see it's already gutted; so just wash it, then chop all the aromatic herbs and grate the zest of the organic lemon. In a small bowl, mix a spoonful of chopped aromatic herbs, the minced garlic and a teaspoon of lemon zest. With this mixture... fill the belly of the fish. In a large bowl, put the 3 whipped egg whites, add the remaining chopped aromatic herbs and the grated lemon zest, after that add the table salt and the coarse salt. The mixture for coating the fish is ready. If you think it's too dry, you can add 1 more egg white or a little water. Take a baking pan, line with parchment paper and make a bed of salt, about 6/10 inch (1 ½ cm) thick. Now take the sea bass, lay it on the bed and cover with the mixture. We're ready to bake our sea bass, completely coated with a salt and herb crust: we'll bake it at 390°F (200°C) for 40 minutes. 40 min. -- 390°F (200°C) After such time, take the sea bass out of the oven, let it rest for 5 minutes, then break the crust with a kitchen hammer. Our wonderful sea bass is ready! With this cooking method, we'll maintain and enhance the flavor of the sea bass, thanks to the protective crust of salt. Before tasting, you must remove the head, the skin, cut into halves and remove the central bone, then you can serve it with extra virgin olive oil, pepper or any dressing you like. There is something comforting about cheese dip. It's also the perfect party appetizer! This recipe is easy to make and bursting with garlic and Italian herbs. So flavorful and so simple. Full Recipe + Ingredients: 16 ounces cream cheese, softened 4 garlic cloves, minced 2 teaspoons Italian seasoning 1/3 cup whole milk 1/2 teaspoon sea salt 4 ounces white cheddar, shredded Start out by adding 16 ounces of softened cream cheese into a mixing bowl and breaking it up using a hand mixer. (NOTE: You can also use a stand mixer if you'd prefer.) Add in 1/3 cup whole milk and mix the ingredients together. Add in 2 teaspoons Italian seasoning, 4 cloves minced garlic and mix. Add 1/2 teaspoon sea salt and mix all the ingredients thoroughly. Add in 4 ounces shredded white cheddar cheese. Fold the cheese into the mixture until it is fully combined. Place the mixture into an oven-safe dish and level it out. Bake for about 30 minutes at 375 degrees Fahrenheit. Take out and serve! Healthy Salt Alternatives - Sumac Spice, Gomasio, Herbs, Dulse Flakes and Himalayan Pink Salt
Salt is so abundant in our diet, from breads to soups to sauces, that we've almost forgotten it's there. What if you could switch it out with delicious, fresh alternatives that your family will enjoy and your heart will love? Sodium, the main component of salt, is an essential nutrient. But the average American takes in far more than the amount considered healthy. A majority of the sodium is consumed to processed foods and not foods that have been prepared from scratch by you. You can replace table salt or white salt with Celtic Sea Salt or Himalayan Pink Salt which contain crucial minerals that our bodies can use. And let's not forget Iodine, it is a naturally occurring mineral in the ocean. Iodine is abundant in seafood and in real sea salt. An excellent salt replacement is Sumac which is a very popular condiment in Turkey and Iran, where the ground fruits are liberally sprinkled over rice. Mixed with freshly cut onions, it is frequently eaten as an appetizer. Sumac may also be added to marinades, salad dressings or rubbed on meets prior to grilling. While you may have heard of poison sumac, the spice sumac is something completely different(and should not be confused). This particular spice is from the berries of the sumac bush they are then dried and ground. Another good alternative in one of my favorites is, Gomasio. A condiment used in Japan much as you and I would use salt. I like the sprinkled on salad, sautéed greens and scrambled eggs. Gomasio is made from sesame seeds and Celtic sea salt, seaweed is optional. You can use a standard pestle and mortar or a blender. Please see my other video on sesame seeds for the recipe. I have a favorite spice blend that I prepare ahead of time in a shaker or jar. The recipe includes: 1 tablespoon each of dried basil, dried thyme and ground coriander, 2 teaspoons onion powder, 2 teaspoons each of dried parsley flakes and ground cumin, 1 teaspoon each of garlic powder, ground mustard, cayenne pepper and paprika. Lastly, Dulse Flakes or Kelp Granules provide a great alternative to table salt. They are rich in minerals especially iodine. Dulse is a type of seaweed that grows primarily on the Northern Pacific and Atlantic coastlines, including Iceland, Canada and regions of Ireland where it has been used as a food and medicine for centuries. This is because research has shown that zinc has a positive effect on overall intestinal health. As always, make sure that animal foods are always organic, grass-fed, pastured raised, or fed their natural diet. Number 2: Bitter Foods and Herbs Bitter herbs and foods are great for naturally stimulating the production of stomach acid. Cooking Up Freshly Caught Trout From The River
Justin recently came back from a camping trip up North where he caught a few trout to bring back to the Treehouse. Watch as Steph takes you through a trout recipe that includes lemon risotto, fresh dill sauce, and baked trout smothered in herbs, lemon, and garlic butter. You can find the recipe down below, nothing was measured but getting creative in the kitchen is what OSG is all about. Baked Trout Recipe: ~Olive oil ~3 trout (cleaned, sliced down the middle, not fillet style) ~5 Tbsp butter (sliced in 6 pats) ~1 Tbsp Herb bland (rosemary, oregano, thyme, basil) ~1 tsp each salt & pepper ~1 lemon (cut in 6 slices) 1. In a large baking dish, sprinkle some olive oil on the bottom so the fish doesn’t stick. 2. Stuff each trout with 2 pats of butter, 2 slices of lemon, and season with herb blend. 3. Sprinkle the skin with salt and pepper 4. Bake at 350 degree F for about 20 minutes or until the fish flakes off using a fork Lemon Risotto Recipe ~1Tbsp butter ~1tsp minced garlic ~1tsp Herb blend (oregano, rosemary, thyme, basil) ~1/3 cup Arborio rice (or risotto rice) ~3-4 cups of vegetable broth ~10-15 asparagus tips ~zest of 1 lemon ~juice of 1 lemon ~pinch of salt & pepper 1. In a skillet, melt the butter and roast the garlic. Add the arborio rice and continue to mix until rice is saturated with oil. 2. Add the herb blend, continue to stir. Add 1 cup of the vegetable broth and let simmer for about 5 mins. 3. Mix in the asparagus tips and another cup of vegetable broth, continue to stir and let simmer. 4. Add the remaining cup of broth and continue to stir. Risotto should become soft, if not continue to cook down and add another cup of broth. 5. Finish with the lemon zest, juice, salt and pepper. Do not overcook, do not let the rice stick. Easy Dill Sauce ~3/4 cup sour cream ~2 tsp Dijon Mustard ~1 Tbsp Dried Dill ~2 Tbsp milk ~2 Tbsp lemon zest ~2 Tbsp lemon juice ~1 tsp sugar ~1/4 tsp sea salt 1. In a mixing cup, combine all ingredients and whisk until evenly incorporated. 2. Herb Salt
Herb salt is a great way to add seasoning to a variety of ingredients. You can use a variety of culinary herbs. Wash and dry herbs overnight before beginning. Measure out about one cup of herbs. Experiment to find your favorite combination. Add herbs and 1/2 cup Kosher salt to your food processor. Do 3 short pulses and the blend for about 1 minute. Pour out in a clean dish and cover with parchment paper. Let dry for about a day. Then pour salt into a sanitized jar. Use on your favorite meats or veggies.
