Seftali (pronounced sheftalee) is a wonderfully tasty sausage which is delicious cooked over charcoals when it is barbeque weather or equally tasty cooked under the grill. Whenever I have served seftalis to friends or family they have been hugely popular and there are never any left. I have very fond memories of my mum making the seftalis under the gazebo in the garden whilst the children played and my husband stoked the charcoal on the barbeque. As we live in London the great British weather means I have cooked just as many under the grill as on the barbeque. Banna, or caul, is not a commonly used ingredient but don't let its looks put you off as it adds flavour and moisture to the seftalis. If you can't find banna then seftali becomes an equally tasty kofte, a skinless sausage. Ingredients: 500g lamb mince 500g banna (sheep caul) 1 onion flat leaf parsley, handful 1/2 tsp cinnamon 1 tsp salt 1/2 tsp pepper 1 tsp chilli flakes or fresh chilli Method: 1. Wash the fresh caul fat in a bowl filled with luke warm water. If the banna is frozen use boiled water to defrost and wash. 2. Finely chop the onion and flat leaf parsley and add the mince. 3. Add the cinnamon, salt, pepper and chilli and mix well with your hands. 4. Stretch out the banna on a chopping board so that it is a thin skin. Roll a handful of the meat mixture in your hands and make into a sausage shape. Wrap the mince in the banna so that the mince is totally wrapped with the skin and cut the banna to form a sausage. 5. Continue until all the mince is used. 6. Grill or barbeque for approximately 10 minutes, turning a few times. 7. Serve with pitta bread and a cucumber, tomato, onion and flat leaf parsley salad.

This is a tasty and juicy lamb casserole. My mum massages the potatoes and meat before cooking which seems to tenderise the meat and increase the flavour. Ingredients: lamb steaks 1.5Kg Cyprus potatoes 2 carrots 3 plum tomatoes 1 onion 4 cloves of garlic 3 bay leaves 1 tsp cumin olive oil 1 chilli pepper chopped (or dried chilli) 100ml chicken stock salt and pepper Method: 1. Preheat the oven to 180C. 2. Peel the potatoes and cut each potato into 4 long ways. 3. Massage the meat and potatoes with the olive oil, cumin and seasoning in the casserole dish. 4. Chop the onion and garlic and add to the dish. 5. Chop the tomatoes and add to the casserole dish. 6. De-seed and chop the chilli pepper, addto the dish. 7. Chop the carrots into chunks and add to the casserole dish. 8. Add the bay leaves. 9. Bake in the oven for approximately 1 hour. 10. Serve with a fresh salad and crusty bread.

Include lemon squeeze and blend well. Whisk together yogurt, garlic, ginger, paprika, dried mint powder and salt in another bowl. Pour yogurt blend over the chicken and coat well. Cover with a stick film and place in an icebox for 60 minutes. Preheat stove to 180° C. Place the marinated chicken on a preparing plate, put the plate in the preheated broiler and heat for fifteen to twenty minutes. Spinach and Egg Pide - The Turkish Kitchen

This is a light pide with a lovely spinach taste. I like to add an egg onto the pide mid cooking to keep it a bit runny when it is ready to eat. If you can't get hellim replace it with mozzarella as they have a similar consistency. Ingredients: Pide dough (200g per pide) 50g spinach 50 gr cheddar 50 gr hellim 2 eggs Method: 1. Steam the spinach with a little water and seasoning until the leaves are wilted 2. Preheat the oven to 220c and lay a sheet of greaseproof paper on a baking sheet 3. Roll the pide dough into a long then oval shape. 4. Place the dough onto the paper 5. Prick the dough with a fork 6. Squeeze the spinach to drain the moisture 7. Arrange the spinach all over the pide and cover with the grate cheese 8. Fold the ends of the pide to seal and then using your thumb and forefinger try and create a lip on the edges of the pide 9. Bake in the oven for 7 minutes then remove and crack 2 eggs onto the pide 10. Baked for a further 5 minutes

Nor Borek is a lovely fried ricotta filled pastry which is best served warm. Ingredients: Filling 450g nor (ricotta) 1tsp cinnamon 260g granulated sugar sunflower oil Pastry 450g plain flour pinch of salt 250ml luke warm water cornflour (for dusting whilst rolling the pastry) Method: 1. Put the flour and salt in a mixing bowl and add the water - mix to make a dough. Knead for 10 minutes until the texture feels like your ear lobe. 2. Leave to rest for 15 minutes. 3. In a separate bowl mash the nor with the cinnamon until it is crumbly. 4. The sugar is added to the nor at the last minute before you create the pastry parcels. 5. Dust a surface with cornflour ready to rolling out the pastry. 6. Create the pastry parcels by rolling out the pastry until it is very, very thin. Sprinkling cornflour as you roll. 7. When the pastry is very thin and nearly transparent fold the pastry in half and roll back one half around the rolling pin. 8. Place little mounds of the nor mix on the pastry. 9. Fold the rolled half of pastry over the top of the nor mounds and press the pastry down around the nor mounds. 10. Cut the pasty to make little nor filled pastry parcels. 11. Put the frying pan on so that the oil gets very hot ready to fry the nor parcels. 12. Fry batches of the nor parcels until golden brown, around 30 seconds a side.

Istanbul sits at the point of intersection between Europe and Asia and its food has been heavily influenced by its rich history and traditions: the palace food from the Ottoman times, the Armenian and Greek influences and that from Anatolia. Although Istanbul is often visited for its past, it's very much a modern metropolis. In a buzzing city with 14 million inhabitants, the food scene is also booming. Twenty-five percent of the city's population is employed one way or another in the food business and many young people are creating opportunities for themselves from its rich gastronomic history. AJEats finds out how food became such a strong part of the culture, and what the future holds for Istanbul's food lovers in a world of fast food and mass production. PRESENTER'S VIEW By Gerald Tan Turkish cuisine was once described to me as the original fusion food. It instantly made sense. How often do we hear that Turkey's commercial hub, Istanbul, is the only city occupying two continents, the point where Europe and Asia embrace. It would follow, then, that their culinary influences would be prevalent in Turkey. Indeed, geography plays a role. The original settlers were nomadic Turkic tribes who left the steppes between the Ural and Altay mountains, migrating towards Central Asia, the Balkans, and finally Anatolia. They brought the elements and practices they picked up along the way, including the food. But there's a much deeper story. Istanbul was also the seat of not one but four empires. It was during the 600-year reign of the Ottomans that Turkish cuisine as we know it began to crystallise. The sultans were quite simply obsessed with food. Archives dating back to the 15th century detail with great accuracy the kind of feasts served to the royal family, the court, and dignitaries from across the land. Visiting the imperial kitchen at Topkapi Palace can be bewildering for any food lover. The sheer size of the industrial-sized chimney stacks is an indication of how much activity took place. Cooks from across the empire vied to get in, hoping to catch the attention of the sultan through their cooking. It was this spirit of competition and creativity that gave birth to thousands of dishes, such as hunkar begendi (stewed lamb with eggplant puree) and mahmudiye (chicken with dried fruit), and propelled Turkish cuisine to be classed as one of the world's three grand cuisines, alongside French and Chinese, a distinction based solely on variety. Today, it's the youth determining Turkey's gastronomic future. I dined with Korhan Karakoyun, a licensed guide who went through rigorous tests on his country's history and now conducts food tours, where he introduces visitors to traditional Turkish dishes and those preparing them in the old ways. I got to cook with the popular TV chef Refika Birgul, who has made a name for herself adapting ancient recipes to suit modern lifestyles. And I met the Demirhan brothers, entrepreneurs tapping into the growing demand for home-cooked flavours delivered to the doorstep. All of them are part of a generation not only defining themselves through food but also furiously trying to keep traditions of the Turkish kitchen alive. This is my mother making Cicek Dolma. This is a summer recipe as that is when courgette flowers are available. Cicek means flower and dolma means filling. In Cyprus there will be street traders selling bags of courgette flowers. They are delicate yellow flowers that can be filled as shown in the video. The cicek dolma in the video was made by my mum in Cyprus at the kitchen table that overlooks the sea. Ingredients: Courgette flowers 1 onion 2 plum tomatoes (fresh and skinned) 1 cup of long grain rice 1 lemon Handful of chopped mint salt and pepper olive oil Method: 1. Chop the onion finely 2. Put the tomatoes in boiling water, skin and finely chop 3. In a bowl put the onion, tomato, rice, mint, lemon and olive oil and mix 4. Fill the courgette flowers with the mixture and fold over the tops to seal 5. Place the dolma in a pan 6. Repeat until all the flowers are filled 7. Place a plate over the dolmas to keep them intact whilst cooking 8. Cover with water 9. Bring to the boil and simmer for 10 minutes until cooked.

Hummus is very easy to make so instead of buying it ready from the supermarket I buy a jar of tahini which will make many servings of hummus. The base ingredient of hummus is chickpeas or 'nonut' in Turkish. As with most pulses you can buy the dried ingredient and soak the chickpeas overnight, then boil until cooked. In the recipe below I use a jar of chickpeas as they are just as good as boiling your own and saves so much times. I use rocket to decorate and as an ingredient for the hummus as the peppery taste really compliments the hummus. Ingredients: 1 400g jar / tin of chickpeas 2 tsp tahini 1 crushed clove of garlic 3 tbsp of extra virgin olive oil 1/2 tsp sea salt 1/2 tsp chilli pepper 1/2 lemon, juiced handful of rocket leaves 4 tbsp of water (or the drained chickpea water) Method: 1. Drain the jar of chickpeas and keep the water for later 2. Rinse the chickpeas in cold water and remove any translucent shells 3. Put the chickpeas in a food processor or use a hand blender 4. Add crushed garlic 5. Add juiced lemon 6. Add tahini 7. Add water 8. Blend 9. Add olive oil whilst blending 10. Add more olive oil and water until it reaches your desired consistency - I like my hummus rough with occasional lump of chickpea 11. Put the hummus in a dish and decorate with olive oil, rocket, chilli pepper, and a few whole chickpeas.

Sis Kebab - The Turkish Kitchen

Every Turk loves sis (pronounced shish) kebab. The Turkish word sis means skewer hence skewered lamb. I prefer to use should of lamb over leg of lamb because the shoulder is more fatty and makes the cooked meat juicier and succulent. Cook the skewer lamb over charcoal to give the meat a charcoal flavour. Sis kebab should be served in pide with salad. Ingredients: 1 shoulder of lamb, cubed 1 tbsp of olive oil lemon salt Method: 1. Prepare your barbeque by wiping lemon over the rack that you cook the meat on. 2. Light you charcoal barbeque an hour before you plan to eat. 3. Massage the cubed lamb in the olive oil. 4. Skewer the meat onto the sis, approximately 6 pieces of meat per sis. 5. When the charcoals are white place the skewers onto the rack, turn when the meat is browned and cook on the other side. 6. Serve with pide and salad.

This salad is a delicious mix of flavours. The red onion brings strength, the plum brings sweetness, and the coriander leaf brings an earthy flavour. I eat this on its own or as an accompaniment to fish or meat. My husband Jon, who never eats salad enjoys this one. Enjoy! Ingredients: 1 Red Onion 1 Sweet Pepper 1 Baby Cucumber 6 Cherry Tomatoes 1 Plum (or peach, or mango) Coriander, handful of fresh leaves 2 tbsp of Olive Oil 1 tbsp of Balsamic Vinegar 1/2 tsp Salt Method: 1. Finely chop the red onion, sweet pepper, plum, cucumber, tomato, coriander leaves and mix together 2. Mix in the salt, olive oil and balsamic vinegar just before serving.

Easy TURKISH RICE PUDDING (Sütlaç)

Turkey is famous for its wide variety of milk-based desserts and puddings. This Turkish-style rice pudding uses only a handful of ingredients and is super easy to make! Ingredients 1 lt of fresh milk 1 cup of rice 1 lt of water 3 tbsp of rice flour 1,5 cup of granulated sugar 200 ml of fresh milk Powdered cinnamon Preparation 1- Wash and drain 1 cup of rice and pass into a large pan. 2- Add 1 lt of water, boil and simmer until the rice is cooked. 3- Add in 1 lt of fresh milk and bring to a boil. 4- In a separate bowl; whisk 3 tbsp of rice flour with 200 ml of fresh milk. 5- Add 1-2 ladle of boiling liquid into milk-and- flour mixture to make it warm. This method is used to prevent flour from getting lumpy. 6- Pass the flour mixture into the pan while whisking. 7- Let the mixture simmer for 10 minutes after boiling. 8- Finally add 1,5 cup of granulated sugar and let the mixture simmer for 2 more minutes. Take the pan off the stove top. 9- Divide the pudding among serving cups or bowls and set aside to cool down. 10- Sprinkle with powdered cinnamon before serving. 11- Enjoy! From there we took the ferry across the Bosphorus to Kadiköy, where we had an incredible Turkish seafood meal for lunch. Finally, we enjoyed some Turkish ice cream, and the show, and had the most incredible kebab I’ve ever had in my life at Zübeyir Ocakbaşı Restaurant. It was an amazing day of Turkish food in Istanbul! 1:27 Turkish breakfast at Çakmak Kahvaltı Salonu - For breakfast we headed to Beşiktaş, one of my favorite areas of Istanbul, and went to a restaurant known for serving breakfast. The breakfast was amazing, and I ate a dish of eggs with beef and butter. The side dishes were also fantastic. Total price - 29 TL ($9.73) 7:40 Boat to Kadiköy and Kadiköy Market - During our trip so far to Istanbul, we hadn’t had a chance to go to the Asian side of Istanbul. So today, we took the ferry over to Kadiköy pier on the Asian side across the Bosphorus. The views of Istanbul from the Bosphorus were stunning. On the other side, the main thing I wanted to do was explore Kadiköy Market, which was every bit as colorful as I had imagined. The fresh vegetables and seafood were fantastic, and I tried a cup of pickle juice. 1 Week Ago in Mumbai: https://goo.gl/mK6rGs 12:45 Seafood lunch at Balıkçı Lokantası Restaurant - Of all the meals I ate in Istanbul, this was one of my personal favorites, being a seafood lover. Not a far walk from the market, we went to a local family run seafood restaurant called Balıkçı Lokantası Restaurant. The owners were really friendly, and I ordered a plate of hamsi (which are anchovies), and I’m not sure of the name of the other dish, but I got Black Sea salmon braised in olive oil and butter I think with herbs and spices. It was one of the best Turkish foods I ate the entire trip to Istanbul. Wow, it was amazing. 20:50 Turkish Ice Cream - After spending some time exploring the Asian side of Istanbul, we took the ferry back to the European side, and since Istiklal Street was on our route, we stopped to have Turkish ice cream. You also see Turkish ice cream vendors playing with their customers, but when you’re the victim, it’s so confusing and funny. They have some serious skills playing with Turkish ice cream. Do you like Turkish ice cream? 23:49 Zübeyir Ocakbaşı Restaurant - For our final Turkish food meal of the day, we headed over to Zübeyir Ocakbaşı Restaurant. Ocakbaşı is a type of Turkish grill, and they served all sorts of different meat included kebabs and lamb chops in particular. We also got a bunch of side dishes and they cooked the kebabs and lamb chops right in front of us within the center of the restaurant. The kebab was the best I’ve ever had in my mouth, with an amazing mixture of minced meat and spices. Total price - 100 TL ($33.55).
