In this video we are going to show you how to make traditional very delicious turkish lentil soup! It’s a very popular soup recipe in Turkey. We made it with vegetables. It’s pretty simple, very nutritious and healthy. If you don't use butter for the top it would be a good dinner for vegan and vegetarian people. We wish you will like this turkish vegetable soup recipe. Start by frying chopped onions in vegetable oil Add chopped garlics to the fried onions Chopped tomatoes Tomato paste Chopped carrots Chopped potatoes Add washed lentils Add boiled water Cover it and cook for 25 minutes Seasons with some salt and black pepper Cook for another 2 minute then use an immersion blender to blend the soup Melt the unsalted butter in a small pan for the top Add paprika powder Lentil Soup Ingredients: 1 cup red lentils 1 medium size carrot 1 medium size potato 1 medium size onion 1 medium size tomato 1 tablespoon tomato paste 4 tablespoons vegetable oil 1 teaspoon salt Half a teaspoon of blackpepper 1.5L (50oz) boiled water For the top: Unsalted Butter Paprika Powder

We explore how a new generation is keeping Turkey's centuries-old culinary traditions alive in a modern world. Istanbul sits at the point of intersection between Europe and Asia and its food has been heavily influenced by its rich history and traditions: the palace food from the Ottoman times, the Armenian and Greek influences and that from Anatolia. Although Istanbul is often visited for its past, it's very much a modern metropolis. In a buzzing city with 14 million inhabitants, the food scene is also booming. Twenty-five percent of the city's population is employed one way or another in the food business and many young people are creating opportunities for themselves from its rich gastronomic history. AJEats finds out how food became such a strong part of the culture, and what the future holds for Istanbul's food lovers in a world of fast food and mass production. PRESENTER'S VIEW By Gerald Tan Turkish cuisine was once described to me as the original fusion food. It instantly made sense. How often do we hear that Turkey's commercial hub, Istanbul, is the only city occupying two continents, the point where Europe and Asia embrace. It would follow, then, that their culinary influences would be prevalent in Turkey. Indeed, geography plays a role. The original settlers were nomadic Turkic tribes who left the steppes between the Ural and Altay mountains, migrating towards Central Asia, the Balkans, and finally Anatolia. They brought the elements and practices they picked up along the way, including the food. But there's a much deeper story. Istanbul was also the seat of not one but four empires. It was during the 600-year reign of the Ottomans that Turkish cuisine as we know it began to crystallise. The sultans were quite simply obsessed with food. Archives dating back to the 15th century detail with great accuracy the kind of feasts served to the royal family, the court, and dignitaries from across the land. Visiting the imperial kitchen at Topkapi Palace can be bewildering for any food lover. The sheer size of the industrial-sized chimney stacks is an indication of how much activity took place. Cooks from across the empire vied to get in, hoping to catch the attention of the sultan through their cooking. It was this spirit of competition and creativity that gave birth to thousands of dishes, such as hunkar begendi (stewed lamb with eggplant puree) and mahmudiye (chicken with dried fruit), and propelled Turkish cuisine to be classed as one of the world's three grand cuisines, alongside French and Chinese, a distinction based solely on variety. Today, it's the youth determining Turkey's gastronomic future. I dined with Korhan Karakoyun, a licensed guide who went through rigorous tests on his country's history and now conducts food tours, where he introduces visitors to traditional Turkish dishes and those preparing them in the old ways. I got to cook with the popular TV chef Refika Birgul, who has made a name for herself adapting ancient recipes to suit modern lifestyles. And I met the Demirhan brothers, entrepreneurs tapping into the growing demand for home-cooked flavours delivered to the doorstep. All of them are part of a generation not only defining themselves through food but also furiously trying to keep traditions of the Turkish kitchen alive. From there we took the ferry across the Bosphorus to Kadiköy, where we had an incredible Turkish seafood meal for lunch. Finally, we enjoyed some Turkish ice cream, and the show, and had the most incredible kebab I’ve ever had in my life at Zübeyir Ocakbaşı Restaurant. It was an amazing day of Turkish food in Istanbul! 1:27 Turkish breakfast at Çakmak Kahvaltı Salonu - For breakfast we headed to Beşiktaş, one of my favorite areas of Istanbul, and went to a restaurant known for serving breakfast. The breakfast was amazing, and I ate a dish of eggs with beef and butter. The side dishes were also fantastic. Total price - 29 TL ($9.73) 7:40 Boat to Kadiköy and Kadiköy Market - During our trip so far to Istanbul, we hadn’t had a chance to go to the Asian side of Istanbul. So today, we took the ferry over to Kadiköy pier on the Asian side across the Bosphorus. The views of Istanbul from the Bosphorus were stunning. On the other side, the main thing I wanted to do was explore Kadiköy Market, which was every bit as colorful as I had imagined. The fresh vegetables and seafood were fantastic, and I tried a cup of pickle juice. 1 Week Ago in Mumbai: https://goo.gl/mK6rGs 12:45 Seafood lunch at Balıkçı Lokantası Restaurant - Of all the meals I ate in Istanbul, this was one of my personal favorites, being a seafood lover. Not a far walk from the market, we went to a local family run seafood restaurant called Balıkçı Lokantası Restaurant. The owners were really friendly, and I ordered a plate of hamsi (which are anchovies), and I’m not sure of the name of the other dish, but I got Black Sea salmon braised in olive oil and butter I think with herbs and spices. It was one of the best Turkish foods I ate the entire trip to Istanbul. Wow, it was amazing. 20:50 Turkish Ice Cream - After spending some time exploring the Asian side of Istanbul, we took the ferry back to the European side, and since Istiklal Street was on our route, we stopped to have Turkish ice cream. You also see Turkish ice cream vendors playing with their customers, but when you’re the victim, it’s so confusing and funny. They have some serious skills playing with Turkish ice cream. Do you like Turkish ice cream? 23:49 Zübeyir Ocakbaşı Restaurant - For our final Turkish food meal of the day, we headed over to Zübeyir Ocakbaşı Restaurant. Ocakbaşı is a type of Turkish grill, and they served all sorts of different meat included kebabs and lamb chops in particular. We also got a bunch of side dishes and they cooked the kebabs and lamb chops right in front of us within the center of the restaurant. The kebab was the best I’ve ever had in my mouth, with an amazing mixture of minced meat and spices. Total price - 100 TL ($33.55). This is my mother making Cicek Dolma. This is a summer recipe as that is when courgette flowers are available. Cicek means flower and dolma means filling. In Cyprus there will be street traders selling bags of courgette flowers. They are delicate yellow flowers that can be filled as shown in the video. The cicek dolma in the video was made by my mum in Cyprus at the kitchen table that overlooks the sea. Ingredients: Courgette flowers 1 onion 2 plum tomatoes (fresh and skinned) 1 cup of long grain rice 1 lemon Handful of chopped mint salt and pepper olive oil Method: 1. Chop the onion finely 2. Put the tomatoes in boiling water, skin and finely chop 3. In a bowl put the onion, tomato, rice, mint, lemon and olive oil and mix 4. Fill the courgette flowers with the mixture and fold over the tops to seal 5. Place the dolma in a pan 6. Repeat until all the flowers are filled 7. Place a plate over the dolmas to keep them intact whilst cooking 8. Cover with water 9. Bring to the boil and simmer for 10 minutes until cooked.

And the read highlight of the day for me was the incredible Turkish food, especially the kebabs. Museum Pass Istanbul - 85 TRY ($28.88) - Before getting started with the things we did in this video, I purchased a Museum Pass for Istanbul, which granted me access to a few of the attractions without having to stand in line. I’m not sure if I really saved much money, but it did save time. 2:00 Sultan Ahmet Camii (Blue Mosque) - Our first stop of the day in this attractions in Istanbul video was the Sultan Ahmet Camii, which is commonly known as the Blue Mosque due to its blue tiles on the inside. We actually arrived a little too early in the morning, so they were not open yet, so we walked around the Hippodrome of Constantinople for a few minutes. When the Blue Mosque opened, we went inside. Both inside and outside are incredible to see. 5:37 Hagia Sophia - One of the most famous pieces of architecture in all of Istanbul and one of the most famous attractions is Hagia Sophia. It started off as a church, later became a mosque, and now it’s an official museum. After entering, you can walk around the main room, but the highlight of visiting Hagia Sophia for me was walking up to the upper galleries for some amazing views from above. 8:24 Topkapi Palace - Finally, one more of the most famous attractions in Istanbul, and located right in the same area as Hagia Sophia and the Blue Mosque is Topkapi Palace, which was an Ottoman Palace. You can walk around the gardens and palace structures, which are now galleries. I especially enjoyed the Imperial Harem, which was a section of the palace reserved for women, and the best preserved area of the palace. 11:25 Sehzade Erzurum Cag Kebab (Şehzade Cağ Kebap) - There are many different types of Turkish food, and cag kebab is a type of kebab from Erzurum in Eastern Turkey. According some some men I met while eating the amazing kebabs, this is the best restaurant for cag kebab in all of Istanbul. The type of kebab is made from lamb, and instead of being on a vertical skewer like other types of kebabs, it’s grilled on a horizontal skewer. The meat is cooked with wood fire, and slice off onto smaller skewers to be served. If you get a chance to try cag kebab, it’s an absolutely stunning Turkish food. The entire meal was delicious, but the best part was meeting the owner of Sehzade Erzurum Cag Kebab and eating a slice of the meat right off the roll hot and fresh. Out entire meal cost 85 TL ($28.88). 20:34 Basilica Cistern - 20 TRY ($6.80) - Arter the amazing Turkish food lunch, we headed over to see the Basilica cistern, one of many underground cisterns in Istanbul. It was interesting to see. We then headed to the hotel for a rest, and then went out again for dinner. 23:27 Dinner at Balkan Lokantasi - Beşiktaş is a neighborhood in Istanbul and we walked over to a restaurant for dinner in that neighborhood called Balkan Lokantasi. It was an extremely busy restaurant serving all sorts of different Turkish food in a cafeteria like style. You walk through the line, choose whatever dishes you want, and pay for what you get. You can eat a serious feast for a pretty good price. I got a little confused and didn’t really know what I was doing, so ended up ordering what was way too much food. But that’s alright, it was all really delicious. It was fantastic day of Turkish food and visiting some attractions in Istanbul that I had wanted to visit my entire life. Turkish cuisine (Turkish: Türk mutfağı) is largely the heritage of Ottoman cuisine, which can be described as a fusion and refinement of Central Asian, Caucasian, Middle Eastern, Mediterranean and Balkan cuisines. Turkish cuisine has in turn influenced those and other neighbouring cuisines, including those of Western Europe. The Ottomans fused various culinary traditions of their realm with influences from Middle Eastern cuisines, along with traditional Turkic elements from Central Asia (such as yogurt and mantı), creating a vast array of specialities—many with strong regional associations. Turkish cuisine varies across the country. The cooking of Istanbul, Bursa, Izmir, and rest of the Aegean region inherits many elements of Ottoman court cuisine, with a lighter use of spices, a preference for rice over bulgur, koftes and a wider availability of vegetables stew (türlü), eggplant, stuffed dolmas and fish. The cuisine of the Black Sea Region uses fish extensively, especially the Black Sea anchovy (hamsi), has been influenced by Balkan and Slavic cuisine, and includes maize dishes. The cuisine of the southeast -Urfa, Gaziantep and Adana- is famous for its variety of kebabs, mezes and dough-based desserts such as baklava, kadayıf and künefe. Especially in the western parts of Turkey, where olive trees grow abundantly, olive oil is the major type of oil used for cooking. The cuisines of the Aegean, Marmara and Mediterranean regions are rich in vegetables, herbs, and fish. Central Anatolia has many famous specialties, such as keşkek (kashkak), mantı (especially from Kayseri) and gözleme. A specialty's name sometimes includes that of a city or region, either in or outside of Turkey, and may refer to the specific technique or ingredients used in that area. For example, the difference between Urfa kebap and Adana kebap is the thickness of the skewer and the amount of hot pepper that kebab contains. Urfa kebab is less spicy and thicker than Adana kebap. Turks usually prefer a rich breakfast. A typical Turkish breakfast consists of cheese (beyaz peynir, kaşar etc.), butter, olives, eggs, tomatoes, cucumbers, jam, honey, and kaymak. Sucuk (spicy Turkish sausage, can be eaten with eggs), pastırma, börek, simit, poğaça and soups are eaten as a morning meal in Turkey. A common Turkish speciality for breakfast is called menemen, which is prepared with tomatoes, green peppers, onion, olive oil and eggs. Invariably, Turkish tea is served at breakfast. The Turkish word for breakfast, kahvaltı, means "before coffee" (kahve, 'coffee'; altı, 'under'). Homemade food Homemade food is still preferred by Turkish people. Although the newly introduced way of life pushes the new generation to eat out, Turkish people generally prefer to eat at home. A typical meal starts with soup (in the winter), followed by a dish made of vegetables or legumes boiled in a pot (typically with meat or minced meat), often with or before rice or bulgur pilaf additionally a salad or cacık (made from diluted yogurt and minced cucumbers). Restaurants Although fast food is gaining popularity and many major foreign fast food chains have opened all over Turkey, Turkish people still rely primarily on the rich and extensive dishes of Turkish cuisine. In addition, some traditional Turkish foods, especially köfte, döner, kokoreç, börek and gözleme, are often served as fast food in Turkey. Eating out has always been common in large commercial cities. Esnaf lokantası (meaning restaurants for shopkeepers and tradesmen) are widespread, serving traditional Turkish home cooking at affordable prices. Summer cuisine In the hot Turkish summer, a meal often consists of fried vegetables such as eggplant (aubergine) and peppers or potatoes served with yogurt and tomato sauce. Menemen and çılbır are typical summer dishes, based on eggs. Sheep's cheese, cucumbers, tomatoes, watermelons and melons also make a light summer meal. Those who like helva for dessert prefer summer helva, which is lighter and less sweet than the regular one.

Turkish food is awesome! We ate it on the street, outside of a local Turkish breakfast joint! It was called Van Kahvaltı Evi. We paid 60 TL for a full breakfast for two, complete with way too much food. Their menu was really extensive, and offered many local specialty foods. Here are some of the local foods that we tried on the street while enjoying the Istanbul lifestyle. Every Turk loves sis (pronounced shish) kebab. The Turkish word sis means skewer hence skewered lamb. I prefer to use should of lamb over leg of lamb because the shoulder is more fatty and makes the cooked meat juicier and succulent. Cook the skewer lamb over charcoal to give the meat a charcoal flavour. Sis kebab should be served in pide with salad. Ingredients: 1 shoulder of lamb, cubed 1 tbsp of olive oil lemon salt Method: 1. Prepare your barbeque by wiping lemon over the rack that you cook the meat on. 2. Light you charcoal barbeque an hour before you plan to eat. 3. Massage the cubed lamb in the olive oil. 4. Skewer the meat onto the sis, approximately 6 pieces of meat per sis. 5. When the charcoals are white place the skewers onto the rack, turn when the meat is browned and cook on the other side. 6. Serve with pide and salad.

Seftali (pronounced sheftalee) is a wonderfully tasty sausage which is delicious cooked over charcoals when it is barbeque weather or equally tasty cooked under the grill. Whenever I have served seftalis to friends or family they have been hugely popular and there are never any left. I have very fond memories of my mum making the seftalis under the gazebo in the garden whilst the children played and my husband stoked the charcoal on the barbeque. As we live in London the great British weather means I have cooked just as many under the grill as on the barbeque. Banna, or caul, is not a commonly used ingredient but don't let its looks put you off as it adds flavour and moisture to the seftalis. If you can't find banna then seftali becomes an equally tasty kofte, a skinless sausage. Ingredients: 500g lamb mince 500g banna (sheep caul) 1 onion flat leaf parsley, handful 1/2 tsp cinnamon 1 tsp salt 1/2 tsp pepper 1 tsp chilli flakes or fresh chilli Method: 1. Wash the fresh caul fat in a bowl filled with luke warm water. If the banna is frozen use boiled water to defrost and wash. 2. Finely chop the onion and flat leaf parsley and add the mince. 3. Add the cinnamon, salt, pepper and chilli and mix well with your hands. 4. Stretch out the banna on a chopping board so that it is a thin skin. Roll a handful of the meat mixture in your hands and make into a sausage shape. Wrap the mince in the banna so that the mince is totally wrapped with the skin and cut the banna to form a sausage. 5. Continue until all the mince is used. 6. Grill or barbeque for approximately 10 minutes, turning a few times. 7. Serve with pitta bread and a cucumber, tomato, onion and flat leaf parsley salad.
